Job Title: F&B ControllerLocation: Mumbai Department: Finance & F&B Operations Reporting To: Finance Head / Operations HeadRole OverviewWe are looking for a detail oriented and analytical F&B Controller to manage and control food & beverage costs across operations. The role involves monitoring inventory, ensuring cost efficiency, maintaining controls, and supporting the business with insights to improve profitability and reduce wastage. Key ResponsibilitiesCost Control & Analysis• Monitor and control food & beverage costs across restaurants/banquets • Analyse consumption, wastage, variance, and yield reports • Ensure adherence to budgeted food cost percentagesInventory Management• Oversee inventory levels, stock movement, and reconciliation across outlets • Conduct regular stock audits, surprise checks, and physical verifications • Ensure proper storage, FIFO practices, and wastage controlsProcurement & Vendor Coordination• Work closely with purchase teams for rate comparisons and cost optimisation • Validate purchase orders, GRNs, and pricing accuracy • Track vendor performance and cost efficiencyReporting & MIS• Prepare daily/weekly/monthly F&B cost reports and variance analysis • Maintain accurate consumption data and cost dashboards • Share actionable insights with operations and finance teamsOperational Coordination• Work closely with Chefs, Operations, and Stores teams for menu costing and portion control • Support menu engineering, pricing strategy, and profitability analysis • Ensure standard recipes and portion sizes are maintainedCompliance & Controls• Ensure adherence to SOPs and internal audit requirements • Establish control systems to prevent pilferage and leakage • Maintain documentation for audits and compliance Skills & Requirements• 4-8 years of experience as F&B Controller / Cost Controller (hospitality preferred) • Strong knowledge of food costing, inventory control, and costing systems • Proficiency in Excel, ERP systems, POS systems, and inventory tools • Strong analytical, numerical, and reporting skills • Understanding of restaurant, catering, or banquet operations • Attention to detail and strong internal control mindset
